Caseificio Sociale Cooperativo di Sorano
The Caseificio Sociale Cooperativo di Sorano is a historic and highly significant entity for the local economy. Founded in 1963, the dairy has around 100 members, spread across Tuscany and Upper Lazio, who produce cow's and sheep's milk. With approximately 30 employees, the cooperative has become a key reference point for dairy production in the region.
Despite its relatively small size, it has successfully entered the large-scale distribution market, with a notable presence in chains such as Coop Firenze, Coop Tirreno, Conad, and Coop Centro Italia. Each year, the Sorano dairy generates approximately 6 million euros in revenue.
One of its flagship products is stracchino, a fresh, soft cheese that, due to its quality, is known and appreciated in many cities across Italy. It is produced three or four times a week to meet the daily sales demand.
The dairy offers a wide range of cheeses, including a pecorino DOP. Among its special cheeses, there is also a pecorino made with vegetable rennet, derived from cardoon, and a long-aged pecorino, produced in large, limited-edition forms that can weigh up to 14 kg.
Furthermore, for some of its products, the Caseificio Sociale di Sorano uses only milk produced within a 30 km radius of the dairy, ensuring even greater freshness and quality. The dairy also stands out for its production philosophy, without the use of preservatives or additives, focusing on the genuineness and natural qualities of its cheeses.
This small but dynamic cooperative has managed to grow while maintaining a strong connection with the local area and cheesemaking tradition, combining craftsmanship with the modernity of large-scale distribution.
