Born in Rome, Debora Pasino devoted eighteen years to the field of antiques, during which she developed a refined aesthetic sensibility and a meticulous attention to detail. Following this extensive professional experience, she chose to reconnect with her family roots by moving to Castell’Azzara, the village from which her maternal grandparents originated, with the aim of creating a hospitality project deeply rooted in the local territory and its culinary traditions.
She founded La Dimora Toscana, nestled among the rolling hills, as well as La Dimora Toscana nel Borgo, located in the historic centre of Castell’Azzara. The latter has been carefully restored in order to preserve the history and original charm of the house, which dates back to 1835. Both projects reflect her professional expertise as well as her commitment to excellence in all its forms.
Debora is passionate about sharing the gastronomic heritage of the region, introducing guests to outstanding local products and traditional recipes while conveying the culinary culture and traditions of her land. The daughter of a father from Turin, she has also cultivated a particular appreciation for wine, which she regards as an essential element of Italian conviviality and cultural identity.
In recent years, she has deepened her engagement with holistic disciplines and personal development, obtaining certifications as a mindfulness facilitator and in first-level Reiki. These practices inform her approach to hospitality, enabling her to engage with others in an authentic and mindful way and to offer an experience that is attentive, genuine, and rich in meaning.
